Chef and restaurateur Dima Al-Chaar, who is spearheading the Levantine experience at Ammoora, has crafted a signature menu as a showcase for vegetable-forward, modern Levantine Cuisine with flavors inspired by time-honored ingredients.
Derived from her belief that a person’s own roots motivate their creativity and inspiration, she is dedicated to her mission of sharing the heritage of Syrian food, hospitality, and culture throughout the world on her Silk Road Culinary Journey. Influenced by family recipes, she creatively explores the flavors of traditional staples to engineer dishes with a modernized, elevated twist which speak to all generations and cultures.
Along the Silk Road, Al-Chaar’s passion has earned her a myriad of accolades including MBE Top Chef Semifinalist Season 3 and Ambassador of Taste for the Global Gastronomy ® Gold Medalist 2021. In 2022 she was invited to the World Expo hosted in Dubai due to her engagement and passion in reviving the Syrian restaurant scene by collaborating and opening a series of restaurants – beginning in her hometown of Damascus.
Formally beginning her career after graduating in culinary, hospitality, and restaurant management from La Salle College in Montreal, Canada, she began her path in the gastronomy and restaurant industry. Today, with almost 20 years of experience in culinary arts and restaurant management, across more than 17 countries, Chef Dima Al-Chaar continues her passionate journey as she brings her consulting experience to the United States at the Ritz-Carlton Residences, Inner Harbor new fine-dining establishment Ammoora.
