MASSAYA WINE DINNER
Ammoora invites you to enjoy of evening of Levantine food and wine exploration, featuring the Massaya Estate. The story of Massaya starts in the heart of the Beqaa Valley at Tanaïl. One of the oldest wine-producing regions in the world, the Beqaa Valley produces 90% of all wine produced in Lebanon. Executive Chef Dima Al-Chaar has crafted a 5-course menu to pair with El Massya Estate's exception wines presented by Wine Maker Salim Naffah.
COURSE ONE
Baked Feta, Eggplant, Za'atar & Honey Flat Bread
Oven-baked flat bread topped with charred eggplant, feta, za'atar, French thyme, cherry tomato confit, capers, honey & pomegranate molasses

A well-balanced blanc with white flower scents. It combines depth, roundness, crispiness and an oriental twinkle thanks to the local obeïdi.
Course Two
Orange Blossom & Mandarin Rockfish Tiradito
Rockfish sashimi, red onions, jalapenos, cilantro, sumac, toasted pine nuts served with orange blossom & mandarin Aji Amarillo sauce

Attractive ruby hue of medium depth. A nose of fresh scrubland with a hint of jujube, while its finesse and elegance are clear as soon it touches the palate. Steadily gains in power over time, with tannins that reflect its cellaring potential.

Star Anise Grilled Pineapple Cotton Cloud
Star anise grilled pineapples, orange blossom vanilla ice cream topped with cotton candy & damascene rose petals
Lebanon, Beqaa Valley, Massaya Arak
Massaya arak is made exclusively from Lebanon’s white obeïdi grapes and green organic aniseed. The liquor is triple distilled in a traditional process using copper stills heated by fragrant fires of vinewood then aged to perfection in ancient clay amphorae before release.
